The Dimnik Estate lies in the Istrian countryside, close to the sea, which can be observed from every corner of the property. The effects of the mistral in summer and the bora in winter create a unique climate that begets the particular quality of the produce grown in our olive grove and vineyard. We have been cultivating olives and grapes with care for several years using a biodynamic approach and practising sustainable agriculture. There are 12 varieties among the 10,700 olive trees that grow at the estate. Olives are hand-picked and cold-pressed daily to preserve all of the best ingredients produced by these remarkable plants.
A lush vineyard with indigenous and foreign varieties stretches amongst the olive trees, bearing the grapes of Malvasia, Teran, Merlot, and Lagrein. World-renowned French experts from Derenoncourt Consultants in Bordeaux make sure our vineyard and wine cellar boast a refined selection of wines.
